Ingredients of Vegetable soup
- It's 1 tbsp of olive oil.
- Prepare 1 of small onion, peeled and chopped.
- It's 2 of carrots, chopped.
- You need 2 sticks of celery, chopped.
- You need 1 of leek, chopped.
- Prepare 1 of potato, peeled and chopped.
- It's 1/2 head of celeriac, peeled and chopped.
- It's 2-3 tbsps of fresh herbs eg thyme, rosemary, parsley.
- It's 1 of bay leaf.
- You need of Salt and pepper.
- Prepare 800 ml of vegan/ veggie stock - maybe some more too.
- Prepare 1 of couple of handfuls of greens eg baby leaf greens, kale, spring cabbage.

Vegetable Soup is the PERFECT dish for a cold day, made with hearty potatoes and corn, green beans, celery, carrots, and onions in a seasoned chicken broth. I can honestly say that this is one of my favorite soup recipes of all time. Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and ½ teaspoon of the salt. In a stockpot, heat oil over medium-high heat; saute carrots, onions, celery and green pepper until crisp-tender.

- Heat the oil in a pan. Add the onion, celery and carrots. Sauté for about 10 mins..
