  1. It's of small head of cauliflower.
  2. You need of mushrooms, I prefer a wild mix.
  3. Prepare of carrots, shredded or whole.
  4. Prepare of small yellow onion.
  5. Prepare of garlic.
  6. It's of crushed red pepper.
  7. You need of dry basil.
  8. You need of dry thyme.
  9. You need of sugar.
  10. You need of crushed tomatoes.
  11. Prepare of red wine.

Vegetarian/Vegan Bolognese instructions

  1. Rough chop your cauliflower, carrots,onions and mushrooms..
  2. Add your vegetable mix and garlic in a blender or food processor and pulse until finely chopped (essentially looks like ground beef).
  3. In a pot heat up about 1/2 cup of oil..
  4. Add your vegetable mix, herbs and spices and saute until they soften..
  5. Add your red wine and reduce by 1/2..
  6. Add your tomatoes and sugar and simmer for about 35/40 mins.
  7. Serve with your favorite pasta and enjoy!.
