  1. It's 1 small of shallot, finely chopped.
  2. You need 2 tsp of turmeric powder, or to taste.
  3. It's 400 grams of mushrooms, finely chopped.
  4. You need 1 cup of long grain rice.
  5. Prepare 2 of garlic cloves, minced.
  6. You need 2 cup of vegetable or chicken stock.
  7. It's 1 tsp of dried rosemary, or to taste.
  8. It's 1 tsp of ground ginger, or to taste.
  9. You need 1 of salt and pepper.

Mushroom and Turmeric Pilaf step by step

  1. Heat some oil in a pot over medium high heat. Add shallot and turmeric, fry until the shallot is translucent, then add mushrooms.
  2. As soon as mushrooms are golden brown, add the uncooked rice and minced garlic. Stir briefly then add the stock.
  3. Cover the pot and bring to a boil. Add rosemary, ginger, salt and pepper. Reduce heat to low, stir often and add more water if needed.
  4. When the rice is nearly done and most of the water evaporated (should take 10-15min), take off heat and cover for 10min without removing the lid.
  5. Serve with cheese if desired. Enjoy :).
