Ingredients of Mushroom and Turmeric Pilaf

  1. You need of shallot, finely chopped.
  2. You need of turmeric powder, or to taste.
  3. You need of mushrooms, finely chopped.
  4. You need of long grain rice.
  5. Prepare of garlic cloves, minced.
  6. It's of vegetable or chicken stock.
  7. It's of dried rosemary, or to taste.
  8. It's of ground ginger, or to taste.
  9. Prepare of salt and pepper.

Mushroom and Turmeric Pilaf instructions

  1. Heat some oil in a pot over medium high heat. Add shallot and turmeric, fry until the shallot is translucent, then add mushrooms.
  2. As soon as mushrooms are golden brown, add the uncooked rice and minced garlic. Stir briefly then add the stock.
  3. Cover the pot and bring to a boil. Add rosemary, ginger, salt and pepper. Reduce heat to low, stir often and add more water if needed.
  4. When the rice is nearly done and most of the water evaporated (should take 10-15min), take off heat and cover for 10min without removing the lid.
  5. Serve with cheese if desired. Enjoy :).
